Pickling little vegetables

I was shocked to see such a big beet looking at me from the veggie bed!

I decided to make the pickles I have been planning for a while. I gathered whatever I saw was ready, like these lovely little carrots! Some only threads, since I wasn't as steady with water as a vegetable gardener should be.

Onions.

Beets.

This carrot & beet had a little love affair on the plate.

Italian heirloom beets nicknamed "Bull's Eye".

Arugula seed pods.

Radish seed pods. I kept one plant of seed pods for sowing next winter.

Into the jar.


A quickly cooked mixture of vinegar, sugar, water and salt makes the brine.
