I watched a truly inspiring film last night called Food, Inc. It explores through first hand accounts how the production of food in America has changed over the past 50 years. It was shocking, eye opening and motivating! I spent today buying produce and cooking some things that I can eat over the next few days. I'm tired from being on my feet all day cooking, yet I am filled with excitement about changing my diet for the better. The haul:
Washing with some BIO vegetable cleaner:
Rinsing.
And drying.
And Cooking! I made a summer Borsht. My Russian great grandmother would be so proud. It is a delicious pink color, filled with diced cucumber, beets and scallions. Gets better as the days pass which is good as this will last me into next week.
For lunch I made the following sandwich in the sandwich maker - it was so amazing.
Marble Rye
cream cheese
red bell pepper
onion
cucumber
tomato
olive oil
salt and pepper
OMG! so good.
My snack was tomatoes with fresh homemade Blue cheese dressing.
And a Zucchini Basil Parmesan strata just came out of the oven for dinner.
I'm tuckered. Must get horizontal.
